White Chocolate Peppermint Cookies
These cookies scream Christmas! The bursting flavours of peppermint and white chocolate are held together by the most gooey and chewy cookie.Those are my two favorite christmas flavours and they are prominent in this treat. Peppermint essence is also added to the cookie for an extra kick. Just the look of these cookies are so festive as the red from the candy cane and white chocolate are easily seen. In each bite I found the peppermint is perfectly balanced by the sweetness of the white chocolate. I bet if you put the cookies under the Christmas Tree these will be the best cookies Santa will ever have!
Ingredients
- 1 1⁄4 cup all purpose flour
- 1⁄2 cup unsalted butter
- 1⁄2 cup white chocolate chips
- 1⁄2 cup crushed candy canes
- 1⁄4 tsp baking soda
- 1⁄8 tsp baking powder
- 1 egg
- 1⁄2 cup sugar
- 1⁄2 tsp vanilla extract
- 1⁄2 tsp peppermint extract
- 1 tbsp of sugar and 1 tbsp of crushed candy canes
the cookie will look underdone but leave it to cool for 10 mins
put candy cane in ziploc bag and crush with rolling pin till small shards
Cookie
- Whisk flour, baking soda, and baking powder together
- Beat butter and sugar in stand mixer till fluffy and lighter in color
- Add in egg, vanilla, and peppermint to mixer
- Add in flour mixture
- Fold in crushed candy canes and chocolate chips
- Mix the 1 tbsp of sugar and candy canes-will be rolling cookies in this
- Shape dough into balls-about 1 heaping tablespoon and roll in sugar and peppermint mixture
- Place on silicone mat and bake for 8 minutes
- Transfer cookies to wire rack and let cool for 10 minutes before eating
