Monkey Bread is perfect if you’re looking to get a cinnamony, hands on experience. This bread is so airy and elastic, and the glaze makes it a cinnamon sugary paradise. Every part of this bread is homemade and tastes like Autumn to me. A secret ingredient which amps up the flavour is a hint of cardamom, just a little makes a powerful mark on the bread. I like to break this recipe down into three steps; the dough, the sugar coat, and glaze. I often think of these as a much healthier and tastier version of munchkins. This initiates our inner monkey instincts as the only way to eat this dessert is to pick apart the bread. With this monkey bread you get the best of cinnamon rolls; the gooey and cinnamon part all in one bite. This bread disappears so quickly that I was forced to be greedy like a monkey!
Bread Dough Ingredients
4 3⁄4 cups flour
4 tbsp unsalted butter+3 tbsp for coating/pan
1 1⁄2 tsp vanilla essence
1⁄2 cup sugar plus 2 tbsp
3 eggs
1 cup hot milk
1 1⁄2 tsp instant yeast
Cinnamon Sugar Coating Ingredients
1⁄2 cup sugar
2 tbsp cinnamon
1⁄4-1⁄2 tsp cardamom
Brown Butter Sugar Glaze Ingredients:
7 tbsp melted unsalted butter
2 1⁄2 tbsp cinnamon sugar
1⁄3 cup light brown sugar
make sure dough is not too dry but not too sticky
pack dough balls closely together
for strong flavour coat with lots of cinnamon sugar
Bread Dough
Whisk the 4 cups of flour, sugar, and yeast in a stand mixer
Make a well and pour milk, vanilla, beaten eggs, and 4 tbsp melted butter
Beat with dough hook for 3 minutes medium speed
Then add remaining 3⁄4 cup flour and beat for 10 minutes till tacky but shouldn’t stick to fingers
Transfer to buttered bowl, cover, and leave in warm place to rise for 50 minutes
For cinnamon sugar; whisk sugar, cinnamon, and cardamom. Set aside.
Assembly in pan
Brush pastry mat with butter and coat with couple tbsp of cinnamon sugar
Use 1⁄2 tbsp of butter to coat bundt pan-any shape pan
Take out bowl and coat top with melted butter
Flip dough out with buttered top at the bottom, and spread dough in large rectangle
Coat top of dough generously with butter and sprinkle with lots of cinnamon sugar
Use sharp knife to cut dough into small squares, like shown in video
Roll into balls, coat in sugar once again and squeeze all balls in bundt pan, let rise for 15 minutes
Glaze and Baking
Preheat oven 350 degrees Fahrenheit
Pour melted butter and sugar into small pan over medium heat
Whisk slowly until lighter in color and bubbles start popping
Pour glaze on top of balls and bake for 35 minutes
Let cool for 15 minutes after baking, invert, and enjoy!
